Potato and cod croquettes

Ingredients:

 

500g potatoes

350g salted codfish, soaked and cleaned

2 eggs

Flour

breadcrumbs

fresh parsley

peanut oil (for frying)

Pepper

 

Method:

 

Boil the unpeeled potatoes for around 40 minutes. Once they are ready, peel them and mash them. Cook the salted codfish in a little bit of water, for 10 minutes, until it starts to come apart easily. Be sure you have pre-soaked it properly, the procedure is quite simple: soak it in water for at least three hours, changing the water every once in a while.

Mix the cod with the mashed potatoes and add an egg, pepper to taste, a handful of finely chopped parsley and one/two spoons of breadcrumbs. Shape the mixture into croquettes and roll in flour. The consistency should be soft yet firm.

Dip the croquettes in a beaten egg, then roll in more breadcrumbs and fry in heated oil. They are cooked when they are golden. Drain and sprinkle with salt just before serving. They should be eaten hot and crunchy, maybe with some mayonnaise for dipping.
