Pasta with cauliflower and smoked salmon
Salmon and cauliflower, two strong flavours blend together for an easy and delicious first course
150g smoked salmon
extra virgin olive oil
Clean the cauliflower then boil for 15 minutes. When it is cooked but still firm, drain and set aside to cool. Sauté the onion in the olive oil until golden, add the finely chopped smoked salmon and sauté for a few minutes, then add the cauliflower and a few spoonfuls of cream.
The sauce should be creamy, if you need to, add some of the pasta cooking water.
Cook the pasta in plenty of salted water, drain and pour over the sauce. Serve hot with a sprinkle of freshly chopped parsley.
